Saffron (Crocus sativus L.) is one of the world’s most prized and expensive spices.
Revered for thousands of years for its fiery red color, distinctive flavor and fragrance, saffron comes from the bright red stigmas of the crocus flower. These very fine red threads are incredibly delicate and must be harvested by hand, very early in the morning to avoid being damaged by the sun.
Crocus has a very short flowering period in autumn, blooming for only two or three weeks a year.
As each crocus flower produces only three threads of saffron, it takes 100,000 crocus flowers to produce a single kilogram of saffron: this is why saffron is so precious that it is even more expensive than gold, hence its name “red gold”.
Originally from Greece, it is also produced in Iran, Morocco, Spain, Italy and the French Mediterranean basin.
